¡The harvest starts at Bodegas TEMPORE!
It's the end of an entire year of hard work in the land and the beginning of a new phase for the grape in the winery. At this stage we have had to be on top of the changes made in the fruit and for this we start with the maturing controls. These controls consist on taking on a very thorough sampling process in different areas of the vineyard in order to obtain the most representative results as possible of the conditions of the grape. We do this sampling process once a week and as the harvest gets closer we do it more frequently, even once every two days.
We select the fruit from different parts of the grape bunches, from the top, middle and bottom part and even from bunches that have been exposed to the sun or matured in the shade. When we repeat the sampling process we always do it on the same vines as from the previous sampling process. Once we have the grape, we taste and analyze.
The obtained results are always compared to those previously obtained to get an idea of the maturing process, this way we can know when the optimal moment of ripeness of the grape will take place. Let's not forget that in order to make a great wine it's essential to have excellent quality grapes.
